François Carillon

Puligny-Montrachet. The Carillon family has been settled there since the sixteenth century, and in 2010 the estate was divided between the two brothers — François kept this share. We follow him here across four bottles, from Mâcon-Igé to Saint-Aubin premier cru: this is precisely the scale on which a Côte de Beaune grower is judged, by what he does when the appellation no longer carries the wine for him.
